Abstract: The 125 recipes included in the book are based on foods and techniques found in France and Italy and are delicious, satisfying, and have visual appeal while being low-calorie. Each recipe also includes a headnote explaining the background of the dish, the special low-calorie technique or approach used, menu ideas, and information about any unusual ingredients. Calorie, protein, fat, and carbohydrate counts are also included and variations on some recipes are given, with calorie counts.
